earth chestnut (conopodium majus) – a herbaceous perennial plant in the celery family. once a well-know food crop in europe, now difficult to find, earth chestnuts are a tasty and versatile food crop. the whole plant is edible, from the chestnut tasting tuber (which can be eaten raw or cooked), to the seeds (used in cooking) as well as the fruit, foilage (similar to parsley) & flowers. hardy, easy to grow in most soil. can be direct sown in early spring or started early inside. hardy to zone 6
